BED & BREAKFAST RECIPE

APPLE AMBROSIA
1 medium bowl
cold/Serves 8-10

3 large apples
1 large lemon, zest and juice
1 20 oz can crushed pineapple, in unsweetened juice, undrained
1/4 cup flaked coconut

Optional:
2-3 sliced bananas
1 6 oz jar maraschino cherries
1/2 cup chopped nuts

Rinse apples well and core, but do not peel. Finely chop apples by hand, and immediately toss with crushed pineapple and pineapple juice. Add the lemon juice and zest, grated. Add the coconut. Toss lightly.

8-10 servings.
